Chocolate Mousse

Ingredient: 85g 61% dark chocolate, 85g unsalted butter, 30ml dark-brewed coffee, 2 eggs, 60g sugar, 15ml dark rum, 8ml water, 1/4 teaspoon vanilla extract, salt
melt together the chocolate, butter and coffee
stir until smooth and remove from heat
whisk egg yorks with sugar, rum and water for about 3 mins until the mixture is thick
remove from heat and place the bowl within the bowl of ice water and beat until cool and thick
